Shoryu is the ramen chain to send a newcomer to. Its Hakata tonkotsu is creamy and dependable, the branches are smart and easy to find around the West End and beyond, and the menu is broad enough to cover most tastes, including hirata steamed buns and a few non-pork options. It doesn't hit the heights of our top picks, and being a slick chain it can feel a little corporate, but the cooking is reliably good and it's an easy, low-risk choice when you want a proper bowl without hunting for a hidden gem. Many branches take bookings, too, so it's a safer bet than the walk-in-only specialists if you're in a group. For a first taste of real tonkotsu, it's a sound bet.
