The Titanium Always Pan Pro is the most durable surface on this list and the choice if you want a pan to keep for life. It's a fully-clad tri-ply pan (titanium/aluminium/stainless) with a coating-free titanium interior using Our Place's patented NoCo technology, made without PFAS — and because there's no coating to scratch off, it tolerates metal utensils, steel wool and the dishwasher, none of which the other four here survive. It works on all hobs including induction, is heat-safe to 535C, doubles as an oven-to-table piece and carries a limited lifetime warranty. That earns it top marks for reliability and features. It ranks last only because of the everyday brief: at around £185 it's far pricier than the rest, it's heavy, and a coating-free titanium surface needs more oil and a little technique — so it can't match the effortless low-oil release of the PTFE pans for frying an egg.
