Goodman is a British take on the New York grill, and its draw for enthusiasts is breadth of sourcing plus in-house dry-ageing: USDA corn-fed beef from Nebraska sits alongside British rare breeds (Belted Galloway, Shorthorn, Longhorn) and grain-fed Australian and Japanese Wagyu, all aged on site and cooked over charcoal. The blackboard lists cuts by weight — indicatively around £36 for a Scottish fillet up to about £55 for an Australian ribeye — so a full dinner with sides and drinks lands near £70–£90pp. It runs Mayfair and City branches (the long-standing Canary Wharf site closed in June 2025), so details vary by branch. It ranks just below Blacklock here on value rather than on beef: the kitchen is arguably more serious about ageing and origin than Hawksmoor's, but the à la carte bill and clubbier, quieter room make it a narrower, connoisseur's pick. Versus Ibai below, you get an easier booking and more cut choice; you give up Ibai's singular, world-ranked txuleta.
